Raw Cashew Fudge Brownies

Who doesn't love chocolate?  For years, people have associated Valentine's Day with the ultimate indulgence of cocoa-sugary goodness.  Forget the diets, forget the health factor, on this day...we splurge.

This year, I'm going to try to create some balance.  This year, I'm coming up with lots of wonderful, delicious recipes involving chocolate for Valentine's day, that won't make you "fall off the wagon," and just a few that will make you leap off the wagon and the cliff next to it.  Let's have some fun!

First, we're going super healthy.  Raw foods are full of nutrients, anti-oxidants and NO preservatives.  These raw cashew fudge brownies are not only rich and delicious, but can satisfy even the craziest craving for cocoa.  They're easy to make, healthy and totally tasty!

Raw Cashew Fudge Brownies

Prep Time: 20 minutes / Cook Time: 0 minutes / Servings 12-16 brownies

Ingredients:
  • 2 cups raw cashew pieces
  • 4 tbsp. raw, organic agave nectar
  • 4 tbsp. cocoa powder
  • 1/4 tsp. pumpkin pie spice
  • pinch of salt 
Steps:
  1. Place the cashews, cocoa powder, pumpkin pie spice and salt in a food processor or blender.  Pulse on high speed for about 30 seconds to finely crush the cashew pieces and combine all ingredients.
  2. Put the food processor on high speed and slowly stream in the agave nectar.  Mix on high speed for 4-5 minutes until the mixture is thick and smooth (like a thick peanut butter).
  3. Spread the mixture into the bottom of a 9x9 brownie pan and press the mixture evenly with your fingers.  Refrigerate for about 10 minutes to allow the mixture to set.
