Pineapple Infused Sake

Pineapple Infused Sake
Prep Time: 15 minutes / Refrigeration Time: 48 hours / Servings: 16
Ingredients: 
  • 1 large pineapple, peeled and chopped into large chunks
  • 2 bottles clear, filtered sake
Steps:
  1. Prepare the pineapple and place it into a large, sealable container.
  2. Pour the sake over the pineapple chunks and seal the container.
  3. Place it in the refrigerator for 48 hours.
  4. If you prefer not to have any pulp in the served sake, run it through a strainer or a cheesecloth before serving.



Skinny Colada

 Prep Time: 5 minutes / Cook Time: 0 minutes / Servings: 1
Ingredients:
  • 2 oz. Dark Spiced Rum
  • 4 oz. Coconut Pineapple Juice
  • Splash (squeeze) of Lime Juice
Steps:
  1. Combine all ingredients in a shaker with ice.  Shake well and pour into serving glass.  Garnish with a lime wedge. 



Passion Fruit Lychee Martinis

Peeled, Pitted Lychee for garnish
Prep Time: 10 minutes / Cook Time: 0 minutes / Servings: 2 martinis

Ingredients:
  • 1/2 lb. fresh lychee (or 1 can of canned lychee in juice or syrup)
  • 3 oz. Smirnoff Passion Fruit Vodka
  • 3oz. Risata Moscato d'Asti
Steps:
  1. If you're using FRESH lychee: Using a serrated knife, cut into the fruit until you reach the hard pit in the center. Cut in half by running the knife lengthwise around the fruit.  Peel off the skin, remove and discard the pit.  Repeat with the other lychee.  Reserve four halves for garnish.  (If you have a pitting machine, you can just peel the fruit and remove the pits, save 2 whole lychee for garnish). 
  2. Fill a large martini shaker about 1/3 of the way with crushed ice. 
  3. Add vodka and wine.
  4. Using a lime juicer, squeeze the juice from about 6 lychee and add to the mixture (about 2 oz. of juice).  If you're using canned lychee, add 2 oz. of juice from the can.
  5. Place the top on the martini shaker and shake or stir (I prefer "shaken, not stirred") until ingredients are combined.
  6. Pour into martini glasses.  Garnish by placing two pieces of fresh fruit onto a toothpick or drink skewer.  Serve immediately.


Unda-neath da Mango Tree Martinis...Shaken, Not Stirred

Prep Time: 5 minutes / Cook Time: 0 minutes / Servings: 3 Martinis

Martinis...Shaken, Not Stirred
Ingredients:
  • 6 oz. Absolut Mango Vodka (Absolut is the VERY best Mango Vodka)
  • 2 oz. Orange Juice
  • 2 oz. Pineapple Juice
  • 2 oz. Mango Nectar
Steps:
  1. Fill a martini shaker about 1/4 full with crushed ice.
  2. Add vodka, mango nectar, pineapple and orange juice.
  3. Place the cover on the martini shaker and shake vigorously for about 10 seconds.
  4. Strain into martini glasses through the top of the shaker. Serve and drink immediately.  
  5. Repeat steps over and over and make lots of moo-la-loo-soo.




Hot Holiday Hooch

Hot Holiday Hooch

Prep Time:  5 minutes / Cook Time: 5 minutes / Servings: 2

Ingredients:
  • 1/2 cup apple cider (Trader Joe's)
  • 1 oz. Gran Marnier
  • 1 oz. Captain Morgan's Spiced Rum
  • 2 cinnamon sticks
  • 2 tbsp. sugar
  • 2 tbsp. whipped cream

Steps:
  1. In a small saucepan heat apple cider to desired temperature.  Add Gran Marnier and Captain Morgan's Spiced Rum.  Mix well.
  2. Wet the rim of two martini glasses with water and dip in sugar, coating the rims.  Pour half of the drink mixture into each glass and garnish with 1 tbsp. each whipped cream and a cinnamon stick.
