Baked Buffalo Chicken Tenders

Baked Buffalo Chicken Tenders
We've already talked about my weakness for buffalo wings, but we haven't discussed that boneless wings are like Kryptonite to me!  I can't get enough of them!  Chicken fingers are enough for an entree for me, but the guilt from all the calories always leaves me making other choices. 
Today, I came up with a solution.  A beautiful, healthy, spicy, crispy solution.  If I could only speak four words for the rest of my life, Baked Buffalo Chicken Tenders would do me just fine!
Frank's RedHot Sauce was a big help today (I love their 5 second radio commercial!), and with some Panko bread crumbs and lots of Light Ranch Dressing, I was a full and happy camper after our appetizers were devoured.   If you LOVE boneless buffalo wings, YOU NEED THIS RECIPE!

Baked Buffalo Chicken Tenders

Prep time: 15 minutes / Cook Time: 20 minutes / Servings: 2

Ingredients:
Baked Buffalo Chicken Tenders
  • 6 chicken tenders
  • 1 cup all-purpose flour
  • 1/2 cup egg substitute or egg whites
  • 7 oz. Panko bread crumbs
  • 6 tbsp. Frank's RedHot Sauce (can be more or less to your taste)
  • 1 tsp. garlic powder
  • 3/4 cup Light Ranch Dressing
  • salt and pepper
  • cooking spray

Steps:
  1. Spray a cookie sheet or glass baking dish with cooking spray and preheat oven to 375 degrees.
  2. Rinse the chicken tenders and pat dry with a paper towel.
  3. Make three different stations with three plates.  Spread the flour onto one plate.
  4. In a mixing bowl, combine the egg substitute or egg whites and 2 tbsp. RedHot Sauce.  Whisk until combined.  Transfer to the second plate.
  5. In a second mixing bow, combine the bread crumbs, garlic powder and 2 tbsp. RedHot Sauce.  Season with salt and pepper and stir until combined.  Transfer to the third plate.
  6. Dredge one chicken tender through the flour and shake off the excess.  Dip into the egg mixture and then coat in the bread crumbs.  Transfer to the cookie sheet or baking dish.  Repeat with the other chicken tenders.
  7. Spray both sides of all the chicken tenders liberally with cooking spray.  Bake in the oven at 375 degrees for 20 minutes.  Remove from the oven and serve immediately.
  8. FOR DIPPING Sauce:  Mix 3/4 cup Light Ranch Dressing and 2 tbsp. RedHot Sauce.  Stir until combined and serve.

  3. Just an update, these are PHENOMENAL!! I had to decrease the hot sauce a bit because Ryan and I are wimps, but WOW they are awesome. Keep them coming Hoop!

  7. I love it everyone! Let me know how they turn out! I also found some chips at Trader Joe's made of Adzuki beans and brown rice that make GREAT crumbs when ground up. It's a great Gluten-Free alternative!

  8. I just made these and they were wonderful! I have celiac disease, so I had to use rice flour and Kinnickinnick Panko style gluten free breadcrumbs, but they turned out great! Thank you so much! I've really missed my buffalo chicken tenders! -Jamie K

  9. Aw, Jamie that is AWESOME! Trader Joe's also has some gluten free bean and rice chips made from Adzuki beans that give these GREAT crunch and flavor.
