OK, so we're talking eating light this week.  Let's talk about eating RAW for a minute.  One of the best ways for me to "cleanse" is to do a raw food diet for 30 days.  It's not that difficult after the first few days because you start to feel the effects right away.  I always feel more energetic, lighter and certainly healthier.  If you're not familiar with raw a raw food diet, or how its done, here's a good article from Webmd on some of the effects and methods of preparation: http://www.webmd.com/diet/features/eating-raw-foods.

This week I'm kicking off a raw-food diet for a few days (until my birthday dinner next Friday), and I started out by making one of my favorite snacks, Raw Almond Butter.  It's a great source of fat, to give me a full-feeling tummy and the raw almonds are packed with anti-oxidants and monounsaturated fats.  Aside from that, it's a great dip, spread and additive.  Use it just like you would peanut butter!

Raw Almond Butter


Prep Time: 10 minutes / Cook Time: 0 minutes / Servings: 8
Raw Almond Butter

Ingredients:
  • 2 cups raw almonds
  • 2 tbsp. raw agave nectar (you can also use raw honey)
  • pinch of sea salt
Steps:
  1. Combine all ingredients in a food processor. Mix on high speed for 6-8 minutes, until smooth and creamy.
