Saucy Mama Thai Chicken Pizza

Sometimes I really miss bread.  If calories and food ingredients didn't effect the way I looked and felt, I'd probably eat bread and/or pasta with just about every meal.  Pizza would be on the menu at least twice a week. But alas, I try to maintain a dairy and wheat-free diet, with an exception here and there when the cravings control me.  That makes pizza difficult, because its full of both dairy and wheat, but if anyone can make it better, Saucy Mama can!

For the base of today's delicious Thai pizza sauce, I used Saucy Mama's Honey Barbeque Wing Sauce.  It has a deep, sweet, rich flavor that blends perfectly with the natural peanut butter and spicy Sriracha that make up our super sauce!

There are a few really good gluten-free pizza crust brands out now, I even see the pre-made crusts in the freezer section and in the bread section of my regular grocery store.  You can always try your hand at a fresh, home-made version, but in my opinion, if you can find a pre-made one that you like, save yourself the time and money! Let someone else worry about how much xantham gum you need for elasticity!

Saucy Mama Thai Chicken Pizza

Prep Time: 15 minutes / Cook Time: 20 minutes / Servings: 8-10 slices

Saucy Mama Thai Chicken Pizza

Ingredients:
  • 1 Gluten-free pizza crust
  • 1/2 cup Saucy Mama Honey Barbeque Wing Sauce
  • 1 tsp. hot chili sauce (Sriracha)
  • 2 tbsp. natural peanut butter
  • 3/4 cup shredded four cheese Italian blend
  • 4 boneless, skinless chicken breast tenders, chopped
  • 2 tbsp. fresh cilantro, chopped
  • 2 tbsp. red bell pepper, chopped
  • 2 tbsp. fresh basil, chopped
  • 2 scallions, chopped
  • 1/4 cup shredded carrots
  • zest of 1 lime
Steps:
  1. Prepare the oven and pizza crust according to package directions.
  2. In a medium mixing bowl, combine the Saucy Mama Honey BBQ Sauce, Sriracha and peanut butter.  Mix vigorously with a spoon until smooth and combined, set aside.
  3. Remove 3 tbsp. of the sauce and heat it in a large skillet on medium heat.  Add the chicken and stir, continuing to cook on medium heat for 5-7 minutes, until the chicken is browned and cooked through.  Remove from the heat and set aside.
  4. Spoon the remaining sauce onto the prepared pizza crust.  Top with the shredded cheese, then top with the chicken, cilantro, red bell pepper, basil, scallions and carrots.  Heat in the oven for 7-10 minutes, until the cheese is melted.  Remove from heat, top with lime zest, slice and serve.
