My sister Nicole and her healthy ways are always setting a great example for the rest of our family.  She's always getting creative in the kitchen with great recipes for delicious treats, using nutritious, conscious ingredients.
Today's recipe is a perfect example of one of her thoughtful treats.  Her Gluten-Free Krispy Rice Treats are delicious, nutritious, easy and fun to make.  Each bite has a different flavor with the variety of nuts, dried fruit and dark chocolate chips used to make this terrific treat!


Gluten-Free Krispy Rice Treats

Krispy Rice Treats
Ingredients:
  • 3 cups Erewhon Crispy Brown Rice Cereal with Mixed Berries (available at most health food stores)
  • 1/2 cup whole oats
  • 2/3 cup natural peanut butter
  • 2/3 cup brown rice syrup
  • 1/3 cup dried cranberries
  • 1/4 cup organic fair-trade, 65% cacao chocolate chips
  • 1/4 cup unsalted, shelled pistachios, roughly chopped
  • 1/4 cup raw almonds, roughly chopped
  • 1 tsp. pure vanilla extract
  • 1 tsp. wheat germ
  • 1 tsp. golden ground flax seed

Steps:
  1.  In a small saucepan, combine peanut butter, brown rice syrup and vanilla extract.  Stir and cook on low heat for about 5 minutes, until ingredients are warm and smooth.  Remove from heat and transfer to a large mixing bowl.
  2. Add the remainder of the ingredients to the large mixing bowl.  Mix well with a large spatula until all ingredients are combined.
  3. Press the mixture down evenly into the bottom of a non-stick, 8x8 brownie pan with your hands.  
  4. Allow the mixture to set and cool for about 30 minutes in the refrigerator before serving.
