BANANA-GASM!

Banana-gasm with cream cheese frosting

You already want one, don't you?!  I LOVE coming up with new recipes on accident.  This was supposed to be a banana bread, but I left it a little too gooey in the center, didn't let it cool enough, and added SO many wonderful things inside the bread, it just couldn't hold itself together.  Pair that with a delicious cream cheese glaze, and WOW...you've got an explosion of goodness in your mouth.  All my hubby and I could do when we first ate this dish was moan with pleasure...hence the name BANANA-GASM.  Enjoy!

BANANA-GASM

Prep Time: 10 minutes / Cook Time: 55 minutes / Servings: 6

Ingredients:
  • 1/4 cup butter
  • 1 cup sugar
  • 1 1/4 cups all-purpose flour
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 1/2 tsp. baking powder
  • 3 extra ripe bananas, chopped
  • 1/4 cup milk
  • 2 tbsp. vegetable oil
  • 1/2 cup Praline Pecans (Trader Joe's are the BEST!)
  • 1/4 cup Macadamia Nuts
  • 1/4 cup Golden Raisins
Steps:
  1. Preheat oven to 400 degrees.   
  2. Spray a loaf pan with cooking spray. 
  3. With an electric mixer, cream butter and sugar in a large mixing bowl until smooth.  Add vanilla and egg and mix until smooth and creamy.  Mix in the bananas, milk, vegetable oil and mix until combined.
  4. Slowly mix in the baking powder and flour until the mixture is smooth.
  5. Stir in the pralines, macadamia nuts and raisins until all ingredients are combined.
  6. Pour the mixture into the loaf pan and bake at 400 degrees for about 50-55 minutes.  Remove and let the loaf cool for about 10 minutes.  Spoon out of loaf onto plates and serve immediately with cream cheese frosting.
Cream Cheese Frosting

Prep Time:  5 minutes / Cook Time: 0 minutes

Ingredients:
  • 1 cup powdered sugar
  • 1/4 cup cream cheese
  • 1 tsp. vanilla extract
  • 1 tbsp. milk

Steps:
  1. Heat cream cheese in the microwave for 20 seconds. 
  2. In a large mixing bowl, combine cream cheese, powdered sugar and vanilla.  Stir until combined.  Add milk and mix until frosting is smooth.
