Today kicks off side dish week in the first round of RWOP Season Two and I have to say, I'm never without heavy contemplation with side dishes. When I'm cooking, I always try to include a starch and a vegetable in my side dishes; even if it means doing two separate sides. Well, this one takes the worry off of both subjects! These little lettuce cups are filled with whole-wheat cous cous, golden raisins, cilantro and ginger. They're packed with lots of exotic flavors and beautiful colors. Enjoy!
