Southwest Stuffed Avocados
This is my favorite entry into RWOP II so far.  I love avocados and I love sharing my inspiration and my home town of San Diego with all of you.  This recipe is easy, healthy and delicious!  This is the first of three (well, maybe four) entries for entree week using Philadelphia Cooking Creme.  It's also the first time you'll get to see my new hair!  Thanks to Kristen and Deco Studio in Solana Beach for the tune-up and trim!

  1. Heather, great recipe! Question, do you brush the avocados with anything prior to putting on the cast iron griddle, or perhaps brush the griddle with something? My wife and I love stuffed avocados.
