OK, so we're talking eating light this week. Let's talk about eating RAW for a minute. One of the best ways for me to "cleanse" is to do a raw food diet for 30 days. It's not that difficult after the first few days because you start to feel the effects right away. I always feel more energetic, lighter and certainly healthier. This week I'm kicking off a raw-food diet for a few days (until my birthday dinner next Friday), and I started out by making one of my favorite snacks, Raw Almond Butter. It's a great source of fat, to give me a full-feeling tummy and the raw almonds are packed with anti-oxidants and monounsaturated fats. Aside from that, it's a great dip, spread and additive. Use it just like you would peanut butter!
Raw Almond Butter
Prep Time: 10 minutes / Cook Time: 0 minutes / Servings: 8

Ingredients:
- 2 cups raw almonds
- 2 tbsp. raw agave nectar (you can also use raw honey)
- pinch of sea salt
- Combine all ingredients in a food processor. Mix on high speed for 6-8 minutes, until smooth and creamy.
