Cucumber Strawberry Salsa
I love healthy, simple side dishes in the summertime that don't take a lot of time and leave a big burst of flavor in you mouth!  This salsa is perfect with just about anything.  It adds color, nutrients, and like I said before a HUGE burst of flavor.

I served this on top of a marinated Mahi Mahi for dinner with some Jasmine rice.  Before I even had a chance to ask my hubby if he liked the dish, his plate was clean!

Cucumber Strawberry Salsa

Cucumber Strawberry Salsa
Prep Time: 10 minutes / Cook Time: 0 minutes / Servings: 4
  • 2 large cucumbers, peeled and chopped
  • 1 cup chopped strawberries
  • 1 avocado, peeled, seeded and chopped
  • 2 tbsp. cilantro, finely chopped
  • 1/4 tsp. chipotle chile powder
  • juice of one lime
  • salt and pepper to taste
Steps:
  1. Combine all ingredients in large mixing bowl, stir until combined and serve.
