Avocado and Roasted Red Pepper Hummus

Having a well stocked, healthy pantry is always handy when you're enjoying time with family at home.  We had all the ingredients on hand today to make a simple, home-made hummus.  The more we thought about what we had, the more ingredients we added, and the more delicious our hummus became.

I LOVE guacamole, and I LOVE roasted red peppers in just about anything.  This is the perfect marriage of the two!  It's an easy, healthy, delicious and fun snack for the entire family.

Try this as a substitute for mayonnaise in your chicken salad, tuna fish or potato salad this summer!

Avocado and Roasted Red Pepper Hummus

Prep Time: 15 minutes / Cook Time: 0 minutes / Servings 4-6
Avocado and Roasted
Red Pepper Hummus

Ingredients:
  • 1 can (15oz.) chickpeas
  • 2 tbsp. tahini paste
  • 1 large avocado, peeled, seeded and chopped
  • 1 1/2 roasted red peppers (about 3/4 cup)
  • 2 large cloves garlic, minced or pressed
  • 2 tbsp. olive oil
  • juice of 1 medium lime 
  • salt and pepper
Steps:
  1. In a blender or food processor combine all ingredients and mix on high speed until smooth and creamy.  Serve with pita bread, chips and fresh vegetables.
