Blue Isle Week: Gluten-Free Spicy Spinach & Mushroom Flatbread

Gluten-Free Spicy Spinach and Mushroom Flatbread
with Blue Isle Spicy Vegetable Spread
It's Blue Isle week on Hoopfinity's Happenings!  I've found a healthy product that is SO delicious and has so many different flavors, I've got to take a whole week to tell you about it!

Blue Isle Mediterranean Yogurt Spreads have the texture and consistency of cream cheese, but are made from the "healthy goodness of yogurt, including live cultures, probiotics and calcium with NO added sugar."  It's only got 60 calories per 2 tbsp. serving.  That's almost 40% fewer calories than regular cream cheese.  Sign me up for that and spread it EXTRA THICK!

I'm experimenting this week with all the delicious flavors of Blue Isle:
  • Original
  • Honey
  • Blueberry
  • French Onion 
  • and today's flavor SPICY VEGETABLE! 
This is a NEW product, so watch for it this summer and fall at your local health food stores. I can honestly tell you that they are ALL AMAZING.  It's a perfect, healthier substitution for cream cheese, sour cream, or mayonnaise.  And today, it's the saucy, creamy base for our Gluten-Free Spicy Spinach and Mushroom Flatbread!

This recipe has two layers of light heat, both in the Blue Isle Yogurt Spread and in the spicy Italian Sausage.  The creamy flavor of the spread eliminates the need for a heavy layer of cheese.  I just sprinkled a very thin layer on top, which saved a BUNCH of calories.  It's easy to make, gluten-free and SUPER delicious!

Gluten-Free Spicy Spinach and Mushroom Flatbread

Prep Time: 10 minutes / Cook Time: 20 minutes / 12 slices

Ingredients:
  • 1 package gluten-free pizza crust, prepared to package directions
  • 8 oz. (1 package) Blue Isle Mediterranean Yogurt Spread in Spicy Vegetable 
  • 1/2 lb. spicy Italian turkey sausage, casings removed
  • 6 oz. sliced white mushrooms
  • 3 cups washed baby spinach 
  • 1/2 cup shredded Parmesan cheese
  • salt and pepper to taste
 Steps:

  1. Preheat oven and prepare the gluten-free pizza crust  according to the package directions.  Remove the crust from the oven when cooked, but leave the oven heated.
  2. In a large skillet, cook the spicy Italian turkey sausage and sliced mushrooms together on medium heat for about 7-10 minutes, until the mushrooms are browned and the sausage is cooked through.  Use a wooden spoon or spatula to break the sausage into small bits as it cooks.
  3. Add the spinach to the pan with the sausage and mushrooms.  Turn off the heat from the stove and stir the spinach around in the pan for about 3 minutes until it wilts and combines with the sausage and mushrooms.  Season with salt and pepper to taste, if needed.
  4. To assemble the flatbread:  Use a spoon on knife to spread the Blue Isle Spicy Vegetable Spread evenly over the pizza crust.  Sprinkle the spinach and mushroom mixture evenly over the Blue Isle spread.  Top with the shredded cheese.
  5. Bake the flatbread in the oven for about 5 minutes, to melt the cheese and combine all the ingredients together.  Remove from the heat, allow it to cool for a few minutes, slice, and serve while warm.
