Chicken Pot Pie - Thai Style!

Spicy Thai Chicken Pot Pie

Cooking competitions are in FULL swing right now. It seems like I can't get ready for my triathlons because I'm too busy writing, photographing and submitting recipes for all the wonderful contests going on right now. There's lots of cash on the table ladies and gents, so fire up that oven and write down everything that's going into tonight's dinner!
Today I'm just sharing a photograph with you that I took of the Spicy Thai Chicken Pot Pie I submitted for the Pillsbury Bake-Off. The recipe's being kept a secret for now...this one's got a $1 million prize!
My friend Kristen is responsible for the beautiful lighting in this one, there was lots of sunlight, and we turned on the pendant lighting that we just had installed in my dining room. I love the bed of basil that surrounds the pot pies and the smell of fresh basil filled the room as we photographed!
I hope you're all as excited about spring and cooking as I am!  We've got the Ritz Cracker Challenge results coming up, RWOP 2 starting in April, the Pillsbury Bake-Off for $1 million and countless other contests for us to cook to our hearts desires!
